What To Do With All Those Easter Eggs...
Are you like me and since Easter has come and gone wondering what in the world to do with all those Hard Boiled Easter eggs? This year we boiled and dyed a flat of eggs, thirty in total! My family is not real big on Egg salad, and they quickly got bored of the plain boiled egg. I had to come up with a way to get everyone excited about the flat of boiled eggs that rest in my refrigerator. So I baked up some Scotch eggs and they were a huge hit! So if you too are looking for a recipe to use up some of those left over eggs, I encourage you to try these out!

Baked Scotch Eggs
Ingredients:
1 lb turkey breakfast sausage
2 TBSP minced onion (I used purple onion)
1/4 tsp dried sage
1/4 tsp ground thyme
1/4 tsp salt
7 eggs
flour
bread crumbs
Directions:
Preheat oven to 400 degrees
mix turkey sausage, onion, and spices together in a bowl
make six patties with sausage
roll hard boiled egg in flour to coat
wrap sausage patty around hard boiled egg
dip in raw egg to coat
roll in bread crumbs until well coated
place on un-greased cookie sheet
bake for 35 minutes or until sausage is thoroughly cooked and no longer pink near egg.
