Green Eggs and Ham...Deviled Eggs

Well it is no longer Dr. Seuss's Birthday, but since it is still his Birthday month I'm just going to put these right here! I was always a huge fan of Dr. Seuss growing up, and still am to be honest. One of my all time favorite stories was Green Eggs and Ham. Over the years as we celebrate Dr. Seuss I always try and do something fun for my kids. I scramble them eggs with green food coloring or put a couple drops in their morning milk. I've turned there cream cheese green in their bagels, and without fail my kids look at me like I've fallen off my rocker and don't touch whatever it is I turned green. Really I don't blame them because it looks pretty gross and food coloring does leave a little hint of a strange flavor when used. This year I went all Natural and it wasn't weird or gross, but actually quite delicious and I still got to have my Dr. Seuss fun :) It was a win win! So now I am going to share this recipe with you, so you can be in on the fun too! Yay!

Avocado filled Green Eggs and Ham Deviled Eggs

What you need:

3 lg hard boiled eggs

1 ripe Hass avocado

1/2 green onion diced very small

1/2 Jalapeno pepper diced very small (omit if you do not want them spicy for the kids)

2 sprigs cilantro diced up

squeeze of fresh lime

a piece of ham cubed into tiny cubes

paprika or red chili powder to sprinkle on top


Cut boiled eggs in half, scoop out yolk

place yolks in bowl

add avocado, onion, pepper, cilantro, and squeeze of lime to bowl

mix all ingredients well with a fork

add avocado mixture back inside egg whites

top with ham

sprinkle with paprika
