Spring is right around the corner! I don't know about you, but my cravings change with the seasons! So now is the time to put away my crockpot and soup recipes and on to everything crunchy, fresh and cool for spring! Today I am bringing you these delightful little cucumber tuna bites. They are perfect for a cool light snack when the sun is warm on your skin! These also make great little appetizers for spring time get togethers!
These are super simple to make and really depends on your personal tuna salad preference!
Here is what to do:
~ Wash and dry a firm cucumber
~peel outer skin to your preference
~ slice cucumber into 1/4 to 1/2 inch slices
~ hollow out most of the seeds making a small boat to hold your tuna salad
~ spoon in about 1 TBSP tuna salad into each cucmber boat
~ Top with Hemp seeds to add a nutty flavor, I even like Sriracha on top!
My Tuna Salad Recipe is as follows:
~ 2 cans chunk light tuna drained well
~ 2 TBSP mayonaise or miracle whip
~ 1 tsp yellow mustard
~ 2 TBSP sweet pickle relish
~ 1/2 tsp celery seed
salt and pepper to taste
(sometimes I add finely chopped celery, onion, and lettuce for a more substance, totally up to you!)
